Sage is a perennial aromatic herb with velvety grey-green leaves and an intense fragrance. Grown at Semis de la Seigneurie, this sage produces dense, aromatic foliage, perfect for meats, stuffings, and autumn dishes. Hardy and easy to grow, it returns year after year and becomes more productive with time.

Culture in Quebec (zone 4b and above)

Sage is easy to grow in pots or in the ground. Start your seeds indoors 8-10 weeks before the last frost (March). Germination is slow (2-3 weeks). Transplant after the last frost to a sunny, well-drained location. With a thick layer of mulch, it can overwinter in zone 4b. It's excellent in pots for bringing indoors in the fall.

Culinary uses

Sage is perfect with pork, poultry, Thanksgiving stuffings, sage butter for pasta, and herbal teas. Its strong aroma calls for moderation: a few leaves are enough! A classic in fall and winter dishes.

Indoor sowing:

  • Start 8-10 weeks before the last frost (March)
  • Germination temperature: 20-25°C
  • Germination: 14-21 days (slow)
  • Depth: 0.5 cm
  • Patience required

Direct seeding:

  • Possible but not recommended (very slow germination)

Transplantation:

  • After all risk of frost (end of May)
  • Spacing: 40-50 cm between plants (becomes wide)
  • Light, well-drained soil, pH 6.0-7.0
  • Exposure: full sun
  • Excellent in a 30cm+ pot

Interview :

  • Moderate watering (tolerates drought)
  • Light fertilization (prefers poor soils)
  • Prune in spring to rejuvenate

  • Divide every 3-4 years to rejuvenate

Harvest :

  • First harvest: 10-12 weeks after sowing (light in the first year)
