Porcelaine Music garlic is a hardneck variety producing very large white bulbs with 4-6 easily peelable cloves. Grown at Semis de la Seigneurie, this Quebec garlic offers a rich and complex, slightly pungent flavor. An ultra-hardy variety, perfect for our northern climate, it can be stored for up to 8-10 months.

Culture in Quebec (zone 4b and above)

Plant in autumn (October-November) before the ground freezes. Plant the cloves 5-8 cm deep, pointed end up, spacing them 15 cm apart. Mulch generously for winter protection. In spring, remove the mulch and allow the plants to grow. Cut the flower stalks in June. Harvest in July-August when the leaves turn yellow.

Culinary uses

Music garlic is perfect for all kinds of preparations: sautéed, roasted, preserved in oil, in sauces, marinades, pestos, soups, and stews. The flower stalks are excellent in pesto, sautéed or grilled!


🌱 CULTURE

Autumn planting:

  • Plant in October-November before the ground freezes
  • Depth: 5-8 cm, point upwards
  • Spacing: 15 cm between cloves, 30 cm between rows
  • Well-drained soil, rich in organic matter
  • Apply generous mulch (15-20 cm of straw)

Spring maintenance:

  • Remove the mulch in the spring
  • Regular weeding
  • Water moderately (never waterlogged soil)
  • Cut the flower stalks in June

Harvest :

  • July-August (when 50% of the leaves turn yellow)
  • Dig up gently with a fork
  • Dry for 2-3 weeks in the shade, in a well-ventilated area
  • Clean and cut stems
