Chervil is a delicate aromatic herb with tender leaves and a subtle anise and parsley flavor. Grown at Semis de la Seigneurie, this chervil produces fragrant, tender green foliage, essential in French fines herbes. Less well-known than parsley or basil, it deserves a place in every Quebec garden for its unique and refined flavor.

Chervil prefers cool temperatures and bolts in warm weather. Sow directly in the garden as soon as the soil is workable (April) or in late summer (August) for an autumn harvest. Avoid starting seeds indoors as it does not transplant well. Grow in partial shade during the summer to prolong production.

Culinary uses

Chervil is perfect in omelets, béarnaise sauce, vinaigrettes, cold soups, salads, and with fish. Always add it at the last minute, as heat destroys its delicate flavor. Excellent with eggs, potatoes, and seafood!

Direct seeding:

  • Sow as soon as the soil is workable (April) or at the end of summer (August).
  • Germination temperature: 15-20°C
  • Germination: 7-14 days
  • Depth: 0.5 cm
  • Spacing: 15-20 cm between plants
  • Successive sowings every 2-3 weeks for continuous harvesting

Indoor sowing:

  • Not recommended (doesn't like transplantation)
  • If necessary: ​​sow in individual pots 4-6 weeks before the last frost

Location :

  • Rich, moist, well-drained soil, pH 6.0-7.0
  • Exposure: partial shade (especially in summer)
  • Excellent in a 20cm+ pot
  • Avoid full sun in summer (it will bolt).
